From the moment you cross the Stony Brook river onto the Holden Manz wine farm you will be enchanted by the welcoming atmosphere on their family estate. The 22 hectare wine estate benefits from wonderfully fertile and dark loam soils and a state of the art wine making cellar under the supervision of award winning winemaker Schalk Opperman.
Their guiding principal is to ‘tread lightly’ and the whole team works hard to minimise our carbon footprint and utilisation of chemicals.
All of the Holden Manz red wines benefit from at least 12 months in French oak barrels. The premium Big G enjoys an additional 2 to 6 months in barrel to allow for the gentle softening of tannins and integration of the oak components.
Although not a rigorously organic estate, the Holden Manz team takes great care in growing their produce with a focus on natural processes. In keeping with their green and holistic approach, they recycle waste, save electricity where they can and use water sparingly on indigenous foliage in order to achieve their goal of being as close to carbon-neutral as possible. When summer rolls around many of the vegetables and fruit served at Franschhoek Kitchen come from their abundant gardens. Herbs (such as basil, chives and coriander), seasoning, jams, juices, chickens, eggs, blue-gum honey and even the mustard are produced on the estate.
